The other day while ravaging the fridge for something I knew I wanted but couldn’t identify, I remembered that I hadn’t made snacks for some time. Having healthy quick-grab food items on hand has always been a priority for our family. With everyone constantly doing school, working, playing, and just living, there is a constant demand for food that is healthy but tasty. Somehow in the last couple months, however, we stopped making snacks to have on hand.
Here’s the first of my recipes:
Oatmeal Energy Bites
Everyone has a recipe for protein bites. They are easy to make because it is hard to go wrong. Love peanut butter? Then add extra. Don’t prefer the chocolate chips (the only unhealthy component)? Fine. Want extra fiber? Use more flax seed. This recipe is easily convertible as well, making double or quadruple batches a breeze.
Cool Tip: Get your kids in the kitchen! Give each child a bowl and help them make their own batch of protein bites. This is one of the simplest recipes for learning by doing, and interaction in the kitchen is like rocket fuel to a child’s creative process!
Ingredients:
- 1 cup oatmeal
- 1/2 cup flax seed
- 1/2 cup peanut butter
- 1/4 cup coconut oil
- 1/4 cup honey
- chocolate chips to taste
Mix together in a bowl and refrigerate at least 1 hour. Then use a cookie scoop to form the bites of protein goodness. Store in the freezer.
