Chocolate Mini Cheesecakes
Ingredients:
- 8 ounces cream cheese, softened
- 4 eggs
- 1/2 cup honey
- 1/4 cup cocoa
- 1/4 cup Greek Yogurt
- 1 tablespoon vanilla
- strawberries, optional
Whip the eggs and cream cheese for at least 1 minute. Add the honey, cocoa, and yogurt one at a time, mixing well after each addition. Fill cupcake tins half full with the , and bake the cheesecakes at 325 degrees for 25-30 minutes, until they are set. Cool for 30 minutes, then chill for 3 hours. Cut strawberries to eat with the cheesecakes.
And, because life would have no meaning without variation, here are some quick tips for adding your own twist to the recipe:
- Delete the cocoa and add blueberries or strawberry pieces.
- Make a crust out of 1 cup graham crackers and 1/2 cup melted butter. Press into the cupcake papers before pouring the cheesecake mixture over the crust.
- Top the cheesecakes with walnut pieces before putting them in the oven.
